Pepperoni Pizza Pasta Bake


Ingredients

cups uncooked large elbow macaroni (12 oz)

package (5 oz) miniature sliced pepperoni (about 1 cup)

Steps
1 Heat oven to 350°F.
2 Cook and drain macaroni as directed on package. Mix with pepperoni, cooking sauce and olives in ungreased 3-quart casserole.
3 Cover; bake 30 to 35 minutes or until hot in center. Sprinkle with cheese. Bake uncovered about 5 minutes or until cheese is melted.

Rich Chocolate Yogurt Pops (Low Carb and Gluten-Free)

Rich Chocolate Yogurt Pops
1/2 cup whipping cream**
2 tbsp cocoa powder
1/4 cup powdered erythritol
3.5 oz high % cacao (85% or higher) chocolate, finely chopped
18 oz Greek yogurt
25 drops stevia extract
1/2 tsp vanilla


In a small saucepan over low heat, combine whipping cream, cocoa powder and powdered erythritol, whisking until smooth. Heat through but do not bring to a simmer. Add chopped chocolate and allow to sit 2 minutes, until melted, then whisk until smooth.

**Depending on the chocolate you use, it may seize when added to the hot cream. All you need to do is increase the heat a bit, and add more cream, one tablespoon at a time, whisking vigorously until it smooths out.

In a medium bowl, combine Greek yogurt, stevia and vanilla extracts. Stir in chocolate mixture until well combined. Spoon or pipe into popsicle molds, add sticks and freeze until solid, at least 2 hours.

Alternatively, you can refrigerate the mixture for an hour or two and then churn it in an ice cream maker according to manufacturer’s directions.

Makes 12 small-sized popsicles. Each popsicle has 4.9 g of carbs and 1.2 g of fiber. Total NET CARBS = 3.7 g.

For frozen yogurt, it makes about 6 servings. So double the amounts above for total carbs.

1/2 cup Renée's® Ranch Dip

2 cups All-purpose flour

1 Tbsp Baking powder

1/8 tsp Baking soda

1/2 tsp Salt

1/2 cup Sugar

1/4 cup Margarine, melted

1/4 cup Egg substitute

3/4 cup Skim Milk

1/2 cup Grated cheddar cheese

DIRECTIONS




Preheat oven to 425 ºF and lightly spay two large muffin tins with non-stick cooking spray.

In large mixing bowl, combine sifted flour, baking powder, baking soda, salt and sugar, stir to blend.

In small mixing bowl combine margarine, Renée’s Ranch Dip, egg substitute, milk and grated cheddar, blend with wire whisk until wet ingredients are thoroughly combined.

Add liquid ingredients to the dry ingredients and stir until just blended.

Spoon prepared batter into the muffin tins, equally distributing batter to each well, bake for 15 to 20 min. until muffins are golden brown.

Remove the muffin tins to a wire rack and let cool for 5 min., invert tins and completely cool muffins before serving.

Guinea Hen Weed (Petivera Alliacea): Anamu is a herb that is indigenous to the Amazon rainforest and the tropical areas of the Caribbean, Central and South America and Africa. Its botanical name is Petiveria alliacea, but in Jamaica, it is known as guinea hen weed, guinea hen leaf, garlic weed or gully root.

Anamu has a long history in herbal medicine in all the countries where it grows.
