Red Clover recipes

Red clover infusion
Ingredient

The ingredient used here is red clover herbs. Preparations
1.) ½ to 1 cup of dried red clover is put into a quart mason jar.
Remember: Fresh herbs are simmered gently in water for a few minutes to break down their cell walls. Dried herbs are not simmered as they have brittle cell walls.
2.) Separately boil 1 quart of water.
3.) Pour this water over the herbs until it fills the top of the jar.
4.) Put a lid on the jar or any other form of covering. This is to prevent evaporation of vital elements, as some herbs have volatile oils that easily evaporate into thin air.
5.) Let steep at least 8 hours or overnight.
Remember: The potency of the tea is increased by long steeping, as the water is given time to dissolve and do much of its work.

6.) Strain and drink. Strain as needed, leaving the herbs in the infusion to continue steeping until all the tea is gone. One can sweeten this tonic infusion by adding 1 Tbsp honey to it while it’s still hot. Alternatively you can just drink it with no sweeteners.
Syrup, lemonade and Juice Beverages
Another fantastic way to enjoy beverages is to make your favorite juices like lemon and raspberry juice more superfluous by adding red clover. Also sample the interesting and by all means delicious, red clover blossom syrup.
Red clover blossom syrup



This syrup can be a great Christmas present as it is canned so one can make lots of it. Ingredients The main ingredient is 1 quart of red clover blossoms. Other ingredients are:
1 quart (4 cups) water
4 cups sugar
½ lemon or orange (organic if possible) chopped, peel and all
1 Tbsp beet juice or berry juice (Optional)
Remember: The citrus is optional. Using the citrus will give the syrup an orangey or lemony flavor. In case you want the pure red clover flavor instead, don’t use the citrus. Both ways still make for a fantastic treat.

Preparation
1.) The blossoms and water are put in a pot
2.) They are then simmered gently for 15- 20 minutes and the heat subsequently turned off. Then cover and let sit overnight.
3.) The next day, strain and press liquid out of spent flowers.
4.) Sugar and sliced citrus are then added and heat slowly, stirring now and again for several hours or until reduced to thick syrup that looks like honey.
5.) One can add 1 Tbsp of beet juice or berry juice to help color the syrup as its brownish like maple syrup. (Optional)
6.) Can in ½ pint or 1 pint Jars.
This recipe makes a little more than 1 pint. One can triple or quadruple this and make more than one batch when they are in season to have enough for the whole year.
Red clover lemonade

Making this herbal lemonade is a perfect way to sneak some nutritious herbs into one’s family diet. This lemonade is also a refreshing summer drink. Ingredients
The main ingredient is 4 cups of fresh red clover blossoms. Other ingredients are:
1 gallon water
2 cups honey (1 lb), you can use sugar, as honey is pretty pricey these days
1 ½ cups lemon juice

Preparations
1.) The clover blossoms are gently simmered in a covered pot for 10 minutes.
2.) Add honey, stirring until it dissolves.
3.) Cover and let steep and cool for several hours or overnight. By steeping, the tea is made strong and potent, maximizing the calcium and other nutrients in the clover.
4.) Finally add lemon juice and chill in the fridge.
Red clover raspberry juice

When making frozen juice concentrates, use tea instead of water. In so doing you are sneaking nourishing herbs into your children’s diet.
Ingredients
6 cups red clover infusion
I can frozen raspberry juice concentrate

Preparations
1.) Make red clover infusion, steeping overnight for maximum nutritional value.
2.) To the tea add 1 can frozen juice concentrate.
3.) Finally, chill in refrigerator for several hours or serve in a tall glass with lots of ice. Remember: Do plan ahead, as this recipe takes about 24 hours of long- steeping and chilling to make. One can use any flavor of juice concentrate to mix the tonic infusions, so dare be innovative! Other red clover meals
Red clover rice

This is yet another treat from the wild. In cooking this rice, you can either use wild rice or brown rice. Ingredients
The main ingredients are 2 cups of red clover flowerets, plucked out of the flower heads and 2 cups rice, either brown or wild. Other ingredients are: ½ cup butter
1 tsp salt

Preparations
1.) The rice is cooked in six cups of water until done.
2.) While the rice is still hot, mix in clover flowers, butter and salt.
3.) Serve hot.
To make this a sweet dish you can add ½ cup honey and some chopped nuts. One can also try quinoa and other grains instead of rice.
Red clover salad

Ingredients
2 cups rice
2 cups red clover flowers, plucked out of the flower heads
1 cup hickory or black walnuts, you can also use other nuts
1 cup chopped dried fruit (try raisins, craisins, dates or apricots)
6 scallions, minced
3 Tbsp olive oil
6 Tbsp lemon juice
1 ½ tsp salt

Preparation
1.) The rice is cooked in 6 cups of water until done.
2.) While cooking or cooling, do not stir. Let cool completely before mixing salad to avoid rice becoming sticky or gummy.
3.) Add all of the above ingredients and mix thoroughly.
4.) Finally, chill and serve or serve at room temperature.
Remember: To make this whole treat extra special, you can use wild rice. Or one can simply mix wild rice and brown or white rice half half. Wild rice and the brown/ white rice have different cooking times. So boil the wild rice separately from the brown or white rice and mix them together after they have cooked.

Red clover pancakes
Ingredients The main ingredients are 1 cup whole wheat flour, 1 cup white flour and 1 cup red clover flowers, pulled out of the flower head. Other ingredients are:
2 eggs
2 cups of milk
½ cup honey or red clover blossom syrup
¼ cup oil
2 tsp baking powder
1 tsp salt

Preparations
1.) The dry ingredients are mixed first.
2.) Then the wet ingredients and both mixed together thoroughly.
Remember: The proven way to keeping pancake batter from getting lumpy is to be sure to add all the wet ingredients before mixing.
3.) Add a little more milk or a little more flour, depending on whether the pancake batter is too thick or thin. Pancake batter should be thin enough to pour, but not runny.
4.) Cook on oiled grill.
5.) Top with butter and red clover blossom syrup.
Red clover almond biscuits

Ingredients
The main ingredients are 1 ½ cups red clover flowers, plucked out of the flower head , ½ cup almonds and 2 cups whole wheat flour. Other ingredients are:
2 eggs
½ cup buttermilk
¼ cup butter
¼ tsp almond extract
3 tsp baking powder

Procedure
1.) The flour, baking powder and almonds are placed in a food processor. Then they are whizzed until they are chopped fine.
2.) Butter is subsequently added and the whole mixture whizzed again until it forms a crumby mixture.
3.) Eggs, buttermilk, almond extract and red clover flowers are then also added and the mixture whizzed again until dough forms a lump.
4.) The dough is then shaped into biscuits and baked on an ungreased cookie sheet at 450 degrees for 10 to 15 minutes or until golden brown.
5.) Serve hot with butter or jam.
These biscuits are sweet and yummy. They can be classified as a sweet or a dessert- like biscuit. Thus they don’t go well with gravy or meats. Red clover is an excellent ingredient to use in cooking any foods, from rice, to pancakes to salads, or simply preparing some nice maple sap tea. The health benefits of red clover are immense and they guarantee for delicious treats.
